A healthy and creamy tomato soup that can be made with chicken or vegetable stock!

- Two tablespoons Olive Oil
- 1 Medium Onion
- 1 Small Red Chili
- 1 Garlic Cloves
- 1 Dried Bay Leaf (or two small ones)
- 2 cans Whole Stewed Tomatoes (28oz per can)
- 1 tablespoon Brown Sugar
- 2 cups Cubed Day-Old Bread, Crusts Removed
- 2 cups Chicken Stock
- Drizzle Good Balsamic Vinegar
- To taste Salt & Pepper
