Fid Resto’s Chocolate Souffle

Ingredients

  • 200g Dark Chocolate
  • 45g Unsalted Butter
  • 70g Sugar
  • 1 Tbsp 35% Cream
  • 4 Egg Yolks
  • 7 Egg Whites

Instructions

  • Heat an oven to 350F.
  • Butter 6 ramekins and place them in the freezer for 15 minutes.
  • Re-butter them and sugar them.
  • Over a double boiler, melt the chocolate and butter together.
  • Once cooled a bit, add the cream and the yolks and mix with the chocolate.
  • Whip the whites to soft peaks and add the sugar a bit at a time.
  • Once all the sugar is added, whip the whites to stiff peaks and make sure the sugar has dissolved.
  • Fold the whites into the chocolate mixture and fill the ramekins to the top.
  • Level the mixture in the ramekins with a spatula and clean around the edges of the ramekins.
  • Place in the oven and cook for approximately 14 minutes or until puffed.
  • Dust with icing sugar and enjoy.
