Fid Resto’s Chocolate Souffle

Ingredients
- 200g Dark Chocolate
- 45g Unsalted Butter
- 70g Sugar
- 1 Tbsp 35% Cream
- 4 Egg Yolks
- 7 Egg Whites
Instructions
- Heat an oven to 350F.
- Butter 6 ramekins and place them in the freezer for 15 minutes.
- Re-butter them and sugar them.
- Over a double boiler, melt the chocolate and butter together.
- Once cooled a bit, add the cream and the yolks and mix with the chocolate.
- Whip the whites to soft peaks and add the sugar a bit at a time.
- Once all the sugar is added, whip the whites to stiff peaks and make sure the sugar has dissolved.
- Fold the whites into the chocolate mixture and fill the ramekins to the top.
- Level the mixture in the ramekins with a spatula and clean around the edges of the ramekins.
- Place in the oven and cook for approximately 14 minutes or until puffed.
- Dust with icing sugar and enjoy.
